
Chickpea and Tomato Salad
INGREDIENTS:
- 19oz (540ml) chickpeas
- 1 large tomato, chopped (2 medium)
- 3 whole green onion, thinly sliced
- 2 tablespoons oil
- 1 tablespoon lemon juice
- 1 tsp ground cumin
- 1/2 tsp chili powder
METHOD:
Put chickpeas, tomato& green onion in a bowl. If using canned chickpeas drain and rinse well.Whisk remaining ingredients together. Toss with the chickpea mixture until coated.
Serve & enjoy!
Note: This serves approximately 4 people. If you are not serving this for guests, you can refrigerate for up to 2 days. If this is for yourself I would also recommend not adding the tomatoes until you are ready for a serving otherwise the tomatoes will go mushy and it makes it easier to weight out your portions.** thank you Brandi for this yummy fresh salad recipe!
