Chickpea and Tomato Salad

INGREDIENTS:

  • 19oz (540ml) chickpeas
  • 1 large tomato, chopped (2 medium)
  • 3 whole green onion, thinly sliced
  • 2 tablespoons oil
  • 1 tablespoon lemon juice
  • 1 tsp ground cumin
  • 1/2 tsp chili powder

METHOD:

Put chickpeas, tomato& green onion in a bowl. If using canned chickpeas drain and rinse well.

Whisk remaining ingredients together. Toss with the chickpea mixture until coated.

Serve & enjoy!

Note: This serves approximately 4 people. If you are not serving this for guests, you can refrigerate for up to 2 days. If this is for yourself I would also recommend not adding the tomatoes until you are ready for a serving otherwise the tomatoes will go mushy and it makes it easier to weight out your portions.
